Chocolate Gnache

10 oz 58% chocolate
8 oz heavy cream
1 1/2 oz butter
1 1/2 oz sugar
  1. Place chocolate in a small bowl
  2. Heat up heavy cream, butter + sugar (until butter melts) 
  3. Pour over chocolate, stir/whip till chocolate melts
  4. Pour in tartlet shells
